We are a family of 5 my children are 5yr,13yr & 15yr our guide was Rick. He was so friendly listening and conversing with my 5-year-old son about what random 5-year-olds often think and talk about.
It is always special when someone gives your kids the time of day to listen to them ever if they are telling rubbish lol.
We were planning and excited about going on this street food tour. We did it on our second day in Vietnam. We skipped lunch so that we can keep space. But we really should have stopped eating a year ago. It did not take a long time for us to get full of tasty goodness.
We tried all new kind of foods, that we have never heard of and everything was super amazing. We tried things like egg coffee, pho bo, bun cha, these things like porridge soup (made from rice, not oats), fruit salad yogurt & local beer ( they call bia hoi) partnered up with this pork meat dish that you would eat with fig leaves very yummy. Sorry I can’t remember a lot of the foods that we ate as most didn’t have English names of them only Vietnam names and I can’t remember sorry about that. We tried like 8 different foods and 2 and different drinks I can honestly say that we enjoyed every single one but one of the things you must try is the egg coffee, you will absolutely love it.
Apparently, you can only have it in Hanoi and there are only three places that make it/have it.
We found going on this tour extremely helpful because we learned roughly what the prices of the food and drink should cost us and where to go for the street food and what also to avoid, Rick was very nice and professional.

1. The Process of Construction of Opera house Hanoi

The Opera House Hanoi was based on the model of the Paris Opera architecture, but smaller, the materials used were changed to be able to suitable for local economic and climatic conditions, and in many colors, The architecture of the Theater in Southern France. The former Grand Building land was a marsh belonging to the two villages “Thach Tan and Tay Luong”, Tho Xuong District. In 1899 the city council held a meeting Under the orders of the chairmanship of Richard ( the Hanoi Ambassador proposed to build the theatre). The designer of the building’s architecture was Harlay and Broyer. This design had to be modified by many architects’ ideas. The project was started on June 7, 1901, under the technical supervision of urban inspector Harlay – one of the two designers.

Leveling was very hard. Every day there were 300 workers, 35,000 bamboo piles were set with 90 cm thick concrete blocks. The project must use more than 12000m3 of material, nearly 600 tons of cast iron. The building occupies an area of 2600m2, the length of the building is 87m, the width is 30m, the highest point of the building compared to the road surface is 34m.

During this time, the building was renamed the Northern Government House and serving as the first headquarters of the Democratic Republic of Vietnam. In the beginning of the Resistance War, on December 20, 1946, a battle broke out between a National Guards protecting the building and French troops with supporting tanks.

This was the most fierce and longest battle in the early days of the Indochina war. After 6 failed attacks, 122 casualties, 4 tanks and 3 armoured vehicles were broken, the French occupied the building. The number of Vietnamese soldiers killed was 45 people. The Battle near the building had become a typical battle of the spirit of “Sacrifice for the country’s life.” of the army and the people of Hanoi in the early days of resistance.

After the liberation of Hanoi capital (10/10/1954), the building was repaired and became the guest house of the Government of Vietnam. Today, the building is used to welcome to important delegations from all over the world.

After Establishing at the end of 1954, the Guest House immediately took care of serving the needs of daily life and activities of high-level delegations of the Parties and Governments who visit Vietnam such as the Foreign Minister, Deputy Prime Minister Prime Minister, Vice Chairman of the National Assembly, Politburo Member of the Party Central Committee upward.In 1969, the numbers of the room were increased to welcome the head of states. After that in 1975, The building builds additional stories and the numbers of the room were increased more than 10-fold.

Since Vietnam accessed to the WTO (November 7, 2006), foreign affairs have been taken place more frequently, with more and more diverse guests, the building also has the opportunity to undertake more foreign affairs. Vietnamese Mid-Autumn Festival (Tết Trung Thu), also known by other names as Festival of family reunion  (Tết Đoàn Viên) or Children Festival (Tết Thiếu Nhi). Moon Cake has 2 traditional cake types that are indispensable of Mid-Autumn Festival: limber Moon Cake and baked Moon Cake. For thousand years, we have created many flavors for Moon Cake such as green tea, mixed, coffee, lotus seed, coconut milk,… for both types of cake.

“To make limber Moon Cake, we use glutinous rice flour for private use with homemade sugar and many spices which make Moon Cake sweet and fragrant. The limber Moon Cake is white, soft with a special flavor inside. Eating a medium limber moon cake and drink a cup of tea is a perfect breakfast for you to launch a day work.
The way to make baked Moon Cake is more difficult than limber Mooncake. Before baking, we need to prepare carefully with dough, a quantity of eggs, how to make core and amount of sugar, if you just make wrong in any step, your cakes will not keep traditional taste. The baking is the most important and also hardest, through the island turn, sweep the special eggs you are not allowed to absentee cake will burn and lose flavor. With these skillful hands, hundreds of our cakes were also successful. If you have had made these cakes with us, you have would feel how happy when you see those on your hands.”

We invited and introduced ourselves the origin, mode, culture of eating Vietnamese cake. We do not make and sell Moon Cake for money, we want to make and sell hospitality, love, tradition, and culture of Vietnamese people. When foreign visitors bought and tasted our cake, we were so nervous and then, they gave us compliments, we were so proud, we sent to them not only a Moon Cake but also a part of Vietnam beauty. Bánh Trung Thu với 2 loại bánh truyền thống loại bánh mà không thể thiếu của tết Trung Thu: bánh dẻo và bánh nướng. Để du khách có nhiều sự lựa chọn chúng mình đã làm với nhiều vị bánh đa dạng như cà phê, đậu xanh, trà xanh, lá dứa, sữa dừa,… cho cả hai loại bánh. Bánh dẻo với loại bột gạo nếp thơm dùng riêng với nước đường tự làm cùng nhiều loại gia vị để bánh được thơm ngát, ngọt vừa tới. Đặc biệt với loại bánh nướng, quá trình gia công có phần khó hơn. Chúng tôi cần tỉ mỉ từng công đoạn nhào bột, lượng trứng, nhân thơm, nước đường không quá nhiều. Khâu nướng bánh cũng không kém phần quan trọng, trải qua các lượt đảo, quét trứng đặc biệt bạn không được phép lơ đãng bánh sẽ cháy và mất hương vị. Trải qua những bàn tay khéo léo ấy, hàng trăm cái bánh của chúng tôi cũng thành công. Nếu bạn tham gia làm bánh cùng chúng tôi, bạn sẽ cảm nhận được niềm vui như thế nào khi bạn làm ra được một chiếc bánh.

Bước trên những nẻo đường,trên những con phố cổ, quanh hồ Hoàn Kiếm, đội bán bánh của chúng tôi đã mang đến cho du khách những cảm nhận tuyệt vời về bánh trung thu, bánh truyền thống của Việt Nam. Chúng tôi đã mời và tự mình giới thiệu nguồn gốc, phương thức, văn hóa ăn bánh của người Việt. Và niềm vui lớn nhất mà chúng tôi nhận lại là những cái gật đầu, lời khen vỡ òa của du khách “great – so good”. Đó là niềm tự hào của chúng tôi. Cảm ơn những con người khéo léo đó.




On last Saturday, I had a nice first tour with an Israel couple staying in King Ly Hotel, Sam was the main guide and I was assistant. It was my first time to do this job so I was really nervous. Because Dat had noticed me at 11 pm the night before and I had to get the bus at 6.45am in the morning so I didn’t have time to prepare for the tour, Sam told me about the first work to do before meeting tourists “ask the hotel receptionist about the guests information if they are out or not”. At that time, they were going out for coffee so I and Sam chatted a little bit. Then we met the two young tourists, introduced ourselves. I had not chosen an English name before so just said that I’m Phuong. The man thought it was the name of a kind of food but I couldn’t understand.

Our tour started at Ly Thai To park, then we came to Ngoc Son Temple, Hoan Kiem lake, the heritage house, Bach Ma temple, Hang Ma street, Dong Xuan Market and stopped at the coffee. Though I can’t remember their name, I know the wife was 26 and the husband was 27, the wife has just graduated from a college of medicine. On the road to Ly Thai To park, they said they have visited Vietnam since the week before and had come to Ha Long Bay and Sa Pa. I asked the women if they had kayaked. She had done, and about the trip to Sa Pa, she told about how she had traveled to mount Phanxipang. In that tour, I was not brave enough to talk about any destinations, I thought that I had better look closely what the main guide did and sometimes talked about what she did not say to extend the story. When we sat on the lake bank, we talked more about Vietnamese culture and tradition,  history, people, religion as well as Israel. At the heritage house, the husband wondered why the living room was near the courtyard and why they weren’t afraid of cold in the winter when sitting there. The couple was amazed at the ancient toilet because of its height. When Sam talked about the lime trees that Vietnamese ate their leaves, immediately the husband picked a leaf and ate it! I thought that he thought it was a kind of vegetable which could be eaten when being raw. Of course, he found it tastes terrible and we had a big laugh. Finally, when we were at the coffee, we had a talk and enjoin egg coffee. The young wife shows us their photos at trip to Sa Pa and on the highest mountain of Vietnam. They told about their pet: a very cute dog that she called her daughter. The man said that he liked manga and especially One Piece, but I didn’t know much about it. The woman said she liked KFC but there was no KFC store in Israel that makes us so surprised. After the talk, we took photos and say goodbye.

According to this first tour, I realized many shortcomings of myself. The biggest problems are listening and the information about everything. If I had known more about life, history, culture, I could have talked with them better, and our talk or maybe the tour will be more interesting! It will take time for me to improve all of that but I’ll try my best later.
